with spring in bloom and the winter coming to an end, i decided to throw it back to one of my favourite fall/winter flavours... apple cider! so this morning i decided to make a batch of freshly fried apple cider cinnamon sugar donuts. the recipe has been adapted from food52. the donuts turned out with a nice dense cakey donut texture! and when sprinkled with cinnamon sugar, you really can't go wrong. i fried them up in my favourite cast iron skillet.. see recipe below! DONUTS (makes 10 donuts/ donut holes)
- 1 cup apple cider or apple juice
- 2 3/4cups cake flour (i used 2 1/2 cups all purpose flour, 1/4 cup of cornstarch)
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/4 teaspoon freshly grated nutmeg
- 2/3 cup raw sugar
- 2 tablespoons vegetable oil
- 1 egg and 1 egg yolk
- 1 teaspoon vanilla
- 1/3 cup almond milk
- vegetable oil for frying
- 1/2 cup sugar for topping
- 2 teaspoons cinnamon for topping
- boil the 1 cup of apple cider on medium heat until it reduces to 1/3 cup of juice. let cool.
- mix the flour, cornstarch, baking powder, baking soda, salt and nutmeg. set aside.
- in a separate bowl mix the oil, sugar, egg, and eggy yolk together until light and thick. add vanilla.
- mix the reduced apple cider and almond milk together. alternating with the flour mixture and cider mixture, add it slowly to the oil and egg mixture until combined. dough should be sticky but easy to roll into a ball.
- cover in plastic wrap and let sit over night.
- to fry the donuts, get out your cast iron skillet and fill it with two inches of oil over medium heat until the temperature reaches 375º degrees. roll the dough out onto a floured surface and cut into a circle about 1/2'' thick and about 8'' wide (i used a mason jar lid as the cookie cutter).
- place the cut donuts on a lined baking sheet and refrigerate for 15 minutes until they are slightly firm and easier to handle. while the donuts are chilling, stir together the cinnamon and sugar for the topping in a shallow, wide bowl.
- fry the donuts for about 45 seconds per side, one to two at a time. when the donuts are a rich golden brown, remove them from the oil onto a paper towel lined plate to soak up excess oil.
- immediately dip them into the cinnamon sugar mixer and eat away!
